Food & Nutrition

Active kids need great food to keep them energized. At ISTC, the food is plentiful, delicious AND kid-approved.

All of our food is served buffet-style so our campers can choose exactly what they want and how much they want. There is always a full salad bar at every lunch and dinner, along with specialty homemade soups and side dishes. Our food is kid and adult approved – our campers and staff alike continuously rave about our food year after year!

We strongly believe in providing healthy and nutritious food. We purchase many of our fruits and vegetables locally at family farms and Amish markets. We are very conscious of food allergies and dietary restrictions, and have plenty of experience working with children with food allergies. In fact, our culinary team has created a hearty gluten-free camp menu. Every meal also includes a selection of vegetarian options, and we never use any nuts, nut products or nut oils.

If you have any specific questions or concerns regarding our food and nutrition, feel free to contact us and we will happily answer any of your questions.

Gluten-Free Camp Menu

At ISTC, we do our best to accommodate campers that have specific food allergies or dietary restrictions. In recent years, many more of our campers experience gluten intolerances, so we expanded our knowledge and expertise of cooking for gluten-free kids by offering a gluten-free camp menu.

Gluten-Free Menu Details

Our Food Service Team Leaders have all completed the Gluten-Free Resource Education and Awareness Training (or GREAT) through The National Foundation for Celiac Awareness (NFCA).

We take our GREAT Kitchen certification very seriously at ISTC. The kitchen has separate prep areas to eliminate the risk of cross-contamination. Only trained staff are involved in handling the food that touches our gluten-free campers’ plates. ISTC kitchen staff are aware of hidden contaminants in processed foods and are always checking labels to make sure every food is truly gluten-free. Once the gluten-free meals are prepared, they are separately plated, covered and stored in the cooler or warmer for service.

As a gluten-free camper comes through the serving line, the chef discreetly hands them their plate and lets them know the other options available on the buffet that are safe to eat. Parents are welcome to bring along simply prepared items from home that campers might enjoy, but please make sure they are also nut-free (as we are a nut-free camp)!

Sample gluten-free camp menu items:

  • Gluten-free waffles with maple syrup
  • Corn tortilla quesadillas
  • Gluten-free cheese pizza
  • Gluten-free pasta with meat sauce
  • Variety of gluten-free desserts

Campers and parents are encouraged to meet with our Executive Chef during check-in so he knows exactly who he is cooking for, and kids can feel comfortable talking with him.

In addition to offering gluten-free camp menus, ISTC staff is AllerTrain certified and accommodates most other food allergies. We encourage you to call our office (570) 620-2267 to discuss your child’s special dietary needs individually.
